This dish originates in the Midwest and particularly from Amish influence. It's often served as a side dish at weddings and family holidays! The heartiness of this dish definately makes it entree worthy - roast beef slow cooked in a rich gravy, tossed with hearty egg noodles and yes - served over mashed potatoes!
I can't serve you all this and call it a meal without vegetables. Slow cooked baby carrots and sweet peas compliment the heartiness perfecty!
